Family Dinner Plan: Roast chicken and Bora Bora Fireballs

Monday starts the second week of our Whole30 clean eating challenge. 7 days done, 23 more to go, and when we make it past this week, it will be smooth sailing!

Once I get into the groove of cooking, it is not difficult to cook extra dinner for planned leftovers the next day. And those leftovers are great for breakfasts and lunches, especially when we go into the office. And even though it is winter, there are loads of interesting vegetables at the farmer’s market, especially of the root variety. Carrots, beets, turnips, parsnips all go well together as a roasted veggie side dish. I supplement with tomatoes that I canned in September, along with salsa and sauerkraut.

I am also enjoying a book I borrowed from Donna – Well Fed: Recipes for People Who Love to Eat by Melissa Joulwan. This is a small-ish cookbook, but nicely detailed and graphically interesting to read, if you like to read cookbooks before bed. My favorite part of the book is the section on sauces, as the Whole30 challenge does not allow sugar and you would be surprised how many sauces have sugar or sweetener. I also like some of the unique “regular” recipes that Melissa has made paleo-friendly, including chili without beans, char siu pork, and unique takes on the meatball. Another friend, Kate, swears by the Scotch Eggs, hardboiled eggs coated in ground pork and baked until brown and crispy. A good book to have in your collection for Paleo or grain-free diets.

Here is my menu plan for the week of January 13:

Sunday: Roast chicken, roasted root vegetables, wilted spinach salad with bacon

Monday: Dinner out with friends

Tuesday: Coconut Chicken Curry, cauliflower rice, sauteed bok choy, spinach salad with asian pear and walnuts

Wednesday: Czech meatballs, mashed cauliflower, braised red cabbage

Thursday: Fresh ham roast, sauerkraut, braised carrots, green veggie of some sort, salad

Friday: Roast salmon, veggie stir-fry with stir-fry sauce from Well Fed, cauliflower rice

Saturday: Birthday dinner out
