Here we are, almost the first week of November. Yeah, whatever, time moves quickly. I will be happy when we get past the college application process, that is consuming us now. Yeah, I know, I am not the one applying. And as my friend Shari keeps reminding me, if I truly believe that college is at the end of this journey, then all will be well. Still.
Our box from Fifth Crow Farms contained Blue Ballet winter squash, Radishes, Leeks, Baby spring mix, Russet Beauty Apples, Dino kale, and Heirloom Calypso dried beans.
Here is my menu plan for the week of October 29-November 3:
Sunday: Meatloaf, mashed sweet potatoes, roasted broccoli, crispy roasted kale
Monday: Vegan Shepherd’s Pie (I am going to use squash instead of sweet potatoes and omit the mushrooms (add bacon!))
Tuesday (Halloween!): Burrito bowls with Slow Cooker Calypso Beans, maybe a little grilled chicken
Wednesday: Rigatoni with Veal Bolognese and Butternut Squash
Thursday: Leftovers
Friday: Takeout and trashy TV after parent conferences!
