Valentine’s Day and Fat Tuesday this week, plus more basketball and a class project or two. Busy week (I feel lame writing that, every week is busy).
In our box from Fifth Crow Farms, we found Hokkaido Stella Blue winter squash, Romanesco cauliflower, Parsnips, Lettuce, Baby kale and Brussels sprouts.
Here is my menu plan for the week of February 11:
Sunday: Sausages and red cabbage (hold over from last week), spring greens spaetzle
Monday: Roasted parsnips and romanesco with parsley pesto (pesto leftover from before), roast chicken
(Fat) Tuesday: Quick dinner after Senior Night with Basketball
(Valentine’s Day) Wednesday: Slow cooker short ribs with potatoes, green salad
Thursday: Fish tacos
Friday: Takeout and Trashy TV!
