Back to school, back to meal plans! Our box from Fifth Crow Farms contained Red Beets, Broccoli, Purple Potatoes, Spinach, Beefsteak Tomatoes, Pristine Apples, and Green Beans. In addition, we have Turnips, Green Cabbage, Cheddar Cauliflower and Rhubarb. Tomatoes went into sourdough and tomato sandwiches for Sunday lunch; apples will be featured in lunches throughout the week. Crazy week ahead, here is the plan for all the rest of this wonderful food:
Sunday: Chicken enchiladas, Mexican street corn salad (specially requested night-before-first-day-of-school dinner)
Monday: Leftovers, plus sautéed spinach, Fudgy Vegan Brownie Cookies
Tuesday: Chana Masala, Curried Cauliflower and Potatoes, rice, naan
Wednesday: Leftovers
Thursday: Grilled pork chops, roasted cabbage wedges and turnips, sautéed green beans
Friday: Homemade pizza
