Lemons are everywhere! At least in our backyard. This week I will pick a peck, zest ’em and juice ’em, and freeze the results for future citrus endeavors.
Our box from Fifth Crow Farms was filled with Baby head lettuce, Rosemary,Butternut squash, Carrots, Cauliflower and Bag ‘o Kale. We also had a bunch of turnips, but my kids have told me that they are arguably the worst vegetable ever so I traded them for another bag of carrots.
Here is my menu plan for the week of March 11:
Sunday: Petrale sole with lemon, salad with lemon dressing, spaghetti with lemon and olive oil
Monday: Roast chicken with cauliflower and carrots
Tuesday: Dinner out after Track meet
Wednesday: Taco Wednesday!
Thursday: Slow cooker butternut squash soup, cheese quesadillas, salad
Friday: Takeout and Trashy TV
