Honestly, this time of year is a little difficult vegetable-wise, because we have loads of turnips, beets and other root vegetables which are a little less easy to eat raw. Not that we don’t, but our preferred preparation is roasting or pan sautéing, which just takes a different kind of planning. This week, based on a recommendation, I am going to try a beet and kohlrabi slaw.
Our box from Fifth Crow Farms contained Rosemary, Collards, Baby kale, Radishes, Brussels sprouts, Cauliflower, and Carrots. Here is my menu plan for the week of February 12:
Sunday: Grilled flank steak, peppers and onions, tortillas, guacamole
Monday: Spaghetti (spaghetti squash or pasta) and meatballs, baby kale salad
Tuesday: Valentine’s Day – Grilled sausages, mashed potatoes or mashed cauliflower, pink sauerkraut, beet and kohlrabi slaw (based on this recipe, ht Paula)
Wednesday: Enchiladas
Thursday: Real Good Fish
Friday: TGIF and Trashy TV
