Our weeks are getting busy! Building a menu plan each week helps ensure dinner is on the table for the nights we are home, and prevents last minute scrambling. Plus, making a plan means less wastes because using all the vegetables in our weekly CSA boxes becomes so much easier.
Hey! This is the first week of autumn, but the nice weather means it is too hot to break out the soups and stews. In the box from Fifth Crow Farms, we found chard, artichokes, beefsteak tomatoes, arugula, Honeycrisp apples, leeks, purple and Savoy cabbage, green beans and heirloom frying peppers. Here is my menu plan for the week of September 17:
Sunday: Turkey meatloaf with chard and leeks, roasted purple potatoes, steamed green beans
Monday: Cabbage, peppers and kielbasa casserole (I will prep this before I go to class, and pop it in the oven when we get home)
Tuesday: Taco Tuesday!
Wednesday: Chicken enchilada casserole, sliced tomatoes
Thursday: Leftovers
Friday: Pizza night!
